Apple Stacker

Ingredients:
Apples
Peanut Butter or almond butter
cheddar cheese

With an adult's help:

  • stand apple upright and thinly slice apple starting a the right edge and moving into the core. Repeat from the left side.  Your slices should be whole with no core marks.
  • Match the slices together by size into sets of two - this will be your "bread"
  • Spread a spoonful of peanut butter on one slice and top with the matching sized slice
  • OR
  • cut a slice of cheddar cheese and "sandwich" between two similar sized slices of apple



Banana Bread French Toast

Ingredients:
1 loaf banana bread
2 ripe bananas- the riper the better
3 eggs
2 Tbsp milk
icing sugar
maple syrup

With an adult's help:

  • slice banana bread into 8 to 10 slices approximately finger width thick (1/2 inch, 2 cm)
  • crack eggs into a shallow pie plate or pyrex dish, fish out any floating shells with a spoon.  Add milk. Beat egg with a fork until whites and yolks are well combined.
  • using a small round cookie cutter (about the size of the banana diameter), cut a hole into each banana bread slice.
  • Slice bananas into rounds about the thickness of each banana bread slice and insert into the hole in the banana bread.  If your cookie cutter is slightly too large you can spread peanut butter or almond butter onto the banana to make it "stick" in the hole.
  • Place bread in the egg dish. Let sit for 10 to 20 seconds, turn over and let sit for 10 to 20 seconds so some of the egg mixture absorbs into the bread.
  • Heat a large non-stick fry pan over medium heat.
  • place a few egg soaked banana bread slices into the pan and cook for 2 to 3 minutes or until egg begins to firm up. Turn over using a spatula. Cook another 2 to 3 minutes. 
  • Remove from pan, put on plate.  Sprinkle with icing sugar and serve with maple syrup.
